one of my goals for 2019 (and 2018 and 2017…) was to start cooking more and i finally forced myself to start by doing a cooking with xandra series on my youtube. granted, i started at the end of the year BUT STILL. and now i’m here with my second cooking trial! which was: scallion pancakes!
i saw a recipe on facebook (subtle asian cooking?) and was like, OMG THIS LOOKS DOABLE/EASY. (spoiler: i was wrong) it was much harder than expected but we chugged through!!!
small disclaimer: i’m really the AMATEUR CHEF. i have very (very) minimal cooking experience but we’re TRYING.
some things i learned along the way / helpful tips:
- don’t add too much water !!!! this was my big mistake. i accidentally poured a liiiiiiittle too much, but i realize now that it’s better to have too little water than too much.
- when you’re rolling out the dough, don’t add too many scallions in the center because it’ll clump later.
- also note to self: add more salt and oil in this step.
- be sure to flatten out your pancakes! i initially didn’t want to squish them too much because the scallions would fall out but… it needs to be done.
SCALLION PANCAKE RECIPE
(modified from cook with mikey’s recipe)
INGREDIENTS
yields 9 pancakes
- 3 cups of all-purpose flour (and more for kneading and rolling)
- 1.5 cups of warm water (~165ºF)
- 9 stalks of scallions
- cooking oil (i used avocado oil)
- salt
DIRECTIONS
- measure flour into a medium-sized bowl
- slowly pour water into the bowl, mixing the flour in one direction
- knead your dough
- let it sit for 30 minutes
- separate your dough into 9 equal pieces
- spread flour onto an even surface and roll out your dough as thin as possible
- add a layer of oil on top of the dough
- sprinkle salt
- scatter ~1 stalk of minced scallions
- roll it up, then again like a cinnamon roll
- flatten and roll it out again
- repeat for all pieces of dough
- add oil to a pan over medium-high heat
- cook your pancakes! flip after the edges begin to crisp or bubble.
and that’s it!

Those pancakes look goooood! I think I have some scallions so maybe I’ll try to make a few of them, but not 3 hours worth of them. Hahahahaha.
